My Favorite ~ Simple Corn Salad*
- 2 cups whole kernel corn: cooked, fresh or canned
- 1 large fresh, ripe tomato
- 1 small red bell pepper
- 1 small yellow onion
- 2/3 cup mayonnaise
- Saltine crackers
- Garnishes, if desired. For example, parsley, paprika, etc. (I find it takes away from the simple, yet delicious combination of flavors.)
Fold in mayonnaise lightly until all vegetables are coated.
Place in pretty medium sized serving bowl, garnish as/if desired.
Serve at right away or chill if desired.
Serve with saltine crackers.
Always cover and refrigerate any that is leftover.
