Big White Lima Beans

1 pkg. Large white Lima’s
1 medium onion (I leave mine whole, just peel)
1/2-1 lb smoked meat, cubed…I use smoked turkey wings, and I have even made them with no meat-just a couple tablespoons of olive oil…
salt to taste
black pepper, opt.
toppings, your choice
Rinse beans, place in dutch oven/similar size pot that is about 1/2 full of water…cut up meat and place in pot, peel onion, place in pot…you can cut it up if desired, add salt, and pepper….let come to boil on med high heat, lower temp to medium low to simmer, cover, let cook for an about 2 hours. Give it a taste test to see when beans are tender and ready…and the “gravy” has thickened a bit. Cook a pot of rice while the beans are simmering.
Serve beans over rice with cornbread on the side, and sweet iced tea (of course)!

2 or 3 tablespoons of olive oil or butter
salt to taste

Rinse beans, place in 4-6 quart dutch oven/similar size pot that is about 1/2 full of water…peel onion, place in pot…you can cut it up if desired, I leave it whole and it just gives the oniony flavor…salt, and pepper….
Place turkey wings on top. Let come to boil on medium heat, lower to barely simmering, cover, let cook for 1-2 hours….taste to see when beans are tender and ready…and the “gravy” has thickened a bit.
