Some things need to be planned, like soaking beans for Red Beans and Rice, and of course thawing something to cook later if necessary. But what about spur of the moment ideas?
Having fresh things right after we get home from the grocery store should make it simple! But if you're like me, you might still have a problem making up your mind what to cook. 🤭 Well, here's my list of simple supper ideas I fall back on . . .and sometimes I just ask my family for suggestions, that works too!

THANKSGIVING 2019: Here's what's left of our Thanksgiving turkey. 🦃 😋 And a big pan of Tetrazzini with homemade sauce (my photo below). I do use canned cream soups at times but found a yummy recipe on Allrecipes YouTube channel and it turned out delicious. Simple, creamy and not too over-the-top as far as ingredients go. I did sauté diced onions and celery before making the roux and just added them in with the other ingredients.

Big white lima beans w/smoked turkey wings, rice, and cornbread.
I usually make my roasts along the lines of a Mississippi Roast, using a few Pepperoncini peppers with some of the juice, a packet of Ranch dressing mix, a few dabs of butter if the roast is lean, sea salt, and plenty of black pepper. I use a big graniteware roasting pan for this as well as baking chicken, steaks, chops, and even meatloaf burgers. As I've mentioned elsewhere, I love my roasting pan! Unless baked really slow and low, you might have to add water to bottom of pan to prevent scorching.
Other variations might be to use a small bottle of Italian salad dressing in place of the dry mix.

Leftover roast usually means we’ll have Po’ Boys.
I’m not a stickler when it comes to authentic ingredients,
just whatever the men want added to theirs.
But I “never” smother the whole thing in gravy. Never.
I do that with Biscuits! 😀

GRILLED CHEESE...You can make them plain with just cheese and butter,
or go all out with meats, and whatever you like.🥰

There's nothing like good fried chicken,
with potato salad, macaroni and cheese.
Or rice and gravy, a vegetable and biscuits. Yum! 😋

Who doesn't love tacos?
A new way I've been making them is to line up the empty
shells in a baking dish, add cooked, seasoned taco meat,
cooked with beans and canned, diced tomatoes, and top with shredded cheese.
Bake them until the cheese is nicely melted, and the shells are toasty
and they're yummy. We don't fix them any other way. now. 🌮👌🏻

Another favorite...BBQ chicken. Grilled with bbq sauce, honey and lime=delicious!
Can also pan-fry boneless chicken in a skillet with olive oil, and the same ingredients mentioned.
Just mix the bbq sauce, honey and lime juice in a bowl, and
drizzle it over the chicken when it's done and continue cooking on low it until nice and golden brown.

Salmon Patties are a family favorite.
Simple recipe:
Using canned salmon, drain, place salmon in a mixing bowl,*** add an egg, a spoonful of mayo, bread crumbs, a little cornmeal, green onions, salt and pepper, and a pinch of dried thyme. Mix well, patty them up and roll in extra fine bread crumbs. Fry until golden brown. Serve on a bun. Yum! 😍
Yes, we eat the bones, no deboning! They are so soft, porous, and crumbly, you never know you've even eaten them.
Even in Salmon Salad, I leave the bones in the fish.

Here's the recipe ingredients:
·tenderized beef steak, enough for your family
·can of diced or stewed tomatoes
·one bell pepper, sliced
·one onion, sliced
·salt pepper and garlic to taste
Place meat in casserole dish, cover with tomatoes and juice, place peppers, onions, and seasonings.
Cook on 350° for about 30 minutes.
Serve over rice.
