Skillet Zucchini w/Basil
•1 lb. ground chuck
•Olive oil - enough to sauté the vegetables
•1 medium to large zucchini-sliced thin
•1 can of diced tomatoes (Or fresh 2 tomatoes, diced up)
•1 medium sized onion, chopped
•2 stalks celery, sliced thin
•1 bell pepper, sliced thin
•Fresh or dried sweet basil*-enough to suit your taste…
•2 cups Mozzarella cheese-grated
Brown ground chuck well, drain and set aside. Put olive oil in same pan. Add zucchini, onion, celery and bell pepper. Sauté until desired doneness is reached. Add ground chuck, tomatoes and basil to vegetables. Stir. Cover, let simmer and let the flavors meld together. Just before serving, but while still hot, add cheese. Serve over rice.
VARIATION: Add spaghetti or marinara sauce instead of tomatoes and make a pasta sauce. Wonderful over fettuccine, vermicelli, or spaghetti or really any pasta.
