Meal & Menu Planning
- How do you plan your meals, or do you plan meals? Do you look at the weekly ads from your favorite grocery store, and plan meals around what's on sale? Or do you plan meals regardless of what is on sale?
- I like to have some idea of what I'm going to cook ahead of time, but sometimes have to make changes according to what's on sale or other reasons.
- A good way to sort of "plan ahead" is to buy meat for the freezer when you can find it for a good price, buy in bulk, and then you don't have to worry about it for quite awhile.
- If you purchase large family packs of ground beef, you can divide it into portions for several meals. You can make patties ahead of time, or make meatballs or meatloaf and freeze them in containers to make later. You can also brown the meat ahead of time, season it for chili or tacos and have it precooked to save time when putting a meal together.
- Chicken can be boiled or baked in advance and be ready when you need it for certain recipes.
- If you find onions, bell peppers or celery on sale, buy it in bulk, then it can be diced and frozen for later use.
- Same goes for vegetables like squash, okra, tomatoes, etc.
- There are so many ways to be prepared, plan ahead, and it makes it so much easier when it comes time to make meal plans.
Here's my meal plan/menu plan back in April of 2007, it looks like this was the week of Easter judging from the Sunday meal. At the time my husband was at home, building the barn, along with our son and nephew. So I cooked bigger noon meals than normal at that time.
Monday
Breakfast-Grilled Cheese Sandwiches & Southern Style Grits
Lunch-Baked whole chicken w/rosemary, carrots, potatoes, Basmati rice
Supper-Porcupine Meatballs, green beans, cornbread
Tuesday
Breakfast-Homemade Cinnamon rolls, oatmeal
Lunch-Chicken Spaghetti, bread sticks, salad
Supper-Roast, baked potatoes, corn-on-the-cob
Wednesday
Breakfast-Homemade Blueberry Muffins and bacon
Lunch-Chicken Sandwiches w/bar-b-que sauce, chips
Supper-Chicken Pot Pie, salad, rolls
Thursday
Breakfast-Beef Sausage Biscuits
Lunch-Taco Casserole, salad, tortilla chips
Supper-Hamburgers, fries, salad
Friday
Breakfast-Omelets with cheddar cheese, whole wheat toast
Lunch-Homemade pizza, breadsticks, salad
Supper-Beef Ribs, potato salad, baked beans
Saturday
Breakfast-Blueberry pancakes, honey, beef bacon
Lunch-Baked chicken pieces with lemon, Fried Rice, salad and rolls
Supper-Fried fish, cole slaw, hush puppies
Sunday
Breakfast-beef bacon, eggs, biscuits, grits
Lunch-Leg of Lamb w/carrots, Basmati rice, gravy (broth from roast), fresh sweet peas and new potatoes, homemade bread and rolls
Supper-Egg sandwiches, chips and dip
And you'll see there are no desserts listed, as I rarely made them, which is healthy, but I should have made a little more effort to have something sweet on hand for them. They were working hard, sweating, working off calories, and it would have been okay, in my opinion now, anyway. You live and learn.
