Corned Beef Hash

This is the closest photo I could find for Corned Beef Hash, mine would have a little more corned beef.
I use canned corned beef for this recipe. I have never measured the ingredients, so I will try to tell you approximately how much of each one. For 3-4 generous servings: 1 can corned beef, open can slide out the meat and dice into big chunks 4 medium potatoes, diced 1 medium onion, diced 3 T. olive oil for browning onions and potatoes 1-2 to 1 cup water or beef broth* Pour olive oil in hot skillet, swirl around until it is coated well. Brown onion and potatoes until nicely browned. Place meat in skillet, stir lightly so as not to break up the meat too much. Pour in desired amount of water turn to low and let simmer until potatoes are done. Serve over rice, along with cornbread or your choice of side dishes and bread. *My husband likes his soupier so I usually add a full cup of water. |

BBQ Corned Beef
Chop up beef, place in skillet with a little olive oil, and add bbq sauce and let simmer until hot. Serve on buns with your desired toppings and side dishes. |
