Eggnog Pancakes…
When I wrote and shared this recipe, on an old blog, there wasn’t a recipe to be found on the internet that used eggnog in pancakes. I searched and searched for one, even thinking that was so crazy, that no one had posted a recipe for “Eggnog Pancakes”. . .Now I’m seeing them everywhere. I’m halfway thinking, they “stole my recipe” 😂 but honestly know that out of necessity, frugality, or both (using what you have on hand), like I did at the time, that people are making these. And once they are tried, there is no turning back to plain pancakes, until the eggnog's gone, that is.🤣 But seriously, it is so yummy! It’s a yummy treat during the holiday season, when eggnog is widely available. And as for a recipe for homemade eggnog, forget it. 😅 I done tried making it, it was a flop. So here’s my old recipe, normal recipe was probably found on a flour sack, with my tweak using eggnog, and a couple little tricks I threw in for making sure they were done in the middle. Nobody wants raw dough in the middle of their yummy Eggnog Pancakes, or even the plain ones for that matter.
So here ya’ go!
Normal recipe calls for:
Make sure skillet is seasoned or add butter or wipe on oil with a paper towel. Get it hot, add enough batter to make a 6 inch pancake. Place a pat of butter in center of pancake, time for 1 minute, flip pancake, time for another minute and take it up.
Big fluffy pancakes will be the end result! Top with your choice of syrup, preserves, honey or whatever you like.
UPDATE: Add a dollop of butter (real butter for goodness sake). It’s soo good!

- 1 cup milk
- 1 egg
- 1 T melted butter or oil
- 1 t sugar

Some folks like jelly, preserves, and other things on their pancakes. I don’t, just give me the syrup and butter, and I’m good. But here’s a recipe for the Pear Preserves and other stuff that would be suitable for pancakes if you like that.
