COUNTRY GIRL CHILI
INGREDIENTS:
Splash of olive oil, for browning vegetables and meat
1 small onion, diced, sliced, julienned, chopped or however you like it.
1 small bell pepper, same
2 cloves garlic, minced
1 lb. ground chuck
Splash of burgundy wine
Splash of brewed coffee, or 1 teaspoon of instant coffee
1 T. plain cocoa powder (not hot chocolate mix, although that might give it a hint of sweetness, hmmm)
1 - 15 oz. can diced tomatoes, undrained
1 - 15 oz. can light red kidney beans, undrained
1 - 15 oz. can dark red kidney beans, undrained
1/2 t. ground cumin
1/2 t. black pepper
1/2 t. or more ground cayenne pepper (opt)
2 T. chili powder
Water to adjust consistency to your liking.
If you like it spicy, then add peppers. I add pepperoncini peppers, and the juice from the jar. Wheew! Love it!!
Now as for directions, add items in order listed, heat olive oil on medium to medium high heat, lightly brown the veggies, add meat, breaking it up as fine or chunky as you like, and cooking until it starts to brown, add remaining ingredients, stir, adjust thickness with water, or some other liquid such as vegetable broth, beef broth, or chicken broth. whatever you have on hand will work. Bring to a slight boil. Cover and simmer about 20 minutes on low.
Serve with your choice of toppings, and corn chips, tortilla chips, crackers or my favorite - cornbread! In fact serving this over crumbled cornbread is very good.
